the single most important factor when choosing a wedding cake," stresses

Generally, the wedding cake is the last major food item tasted,
and ultimately remembered, from a reception and should be the highlight of
the evening. Of course cake decorating
is very important too but exceptional taste is paramount."
Rick Reeves of Reeves Cake Shop offers this advise, " When choosing an icing, takes several things into consideration.
First, the location of the reception.
Is it outside? If so, you may
want to consider a rolled fondant cake.
If the hall is air conditioned, then a buttercream or a non dairy whip
creme are excellent choices. Second,
what style of decorating are you looking for?
A lot of today's cakes are shown in the fondant icing. If fondant is not your favorite icing, you
will probably have to compromise on the style of decorating to something that
can be accomplished in another type of icing. " When comparing cake designers,
look for smooth frosting, evenness of cake, and artistic flair,"
suggests Nadine Budziak of Cakes by Nadine.
"
Also, the ability and willingness to help you design your cake
for that special day."
" While planning the menu, know that it's not just about the
wedding cake anymore," adds Jim Rito of Rito's Italian Bakery.
" The wedding cake is the focal point of your wedding reception," says Cathy Baluch of White Flower Cake Shoppe. " Let it make a personal statement about you as a couple. Don't be afraid to use color, texture, interesting patterns... design it to be something your guests will remember for years to come!"
